3 Ingredient Salted Caramel Almond Butter

Ingredients
  • 2 Cups of Raw Almonds
  • 1 Cup of Pitted Dates (make sure your dates are soft, or soak them in warm water for ~10 minutes)
  • Generous Dash of Sea Salt
Instructions
  1. Preheat oven to 350F.
  2. Spread almonds on a baking sheet and bake in the oven for 7-10 minutes, or until lightly toasted.
  3. If your dates are not already soft, place them in warm water to soften for a few minutes, then blend in a blender or food processor until they form a sticky paste. If the dates are difficult to blend, add warm water one tablespoon at a time until well blended (I used about three tablespoons of soaking water). Add sea salt and blend until combined. Place in separate bowl and set aside.
  4. After the almonds have roasted and cooled slightly, transfer to the food processor and blend until smooth. It can take several minutes for the almonds to break down into butter depending on the strength of your food processor.
  5. Once the smooth, almond butter has formed stir in salted date caramel mixture. Don't overmix, as you want there to be swirls of the caramel. Garnish with additional salt if desired.
  6. Store in a sealed container in the fridge.
