Combine the chia seeds, almond milk, maple syrup and vanilla in a small bowl or mason jar. Cover and refrigerate for 3 hours or overnight.
Before serving, sprinkle cinnamon and nutmeg over apple. Microwave for 30-45 seconds until apple begins to soften. Top pudding with softened apples and walnuts. Serve immediately.
