Ingredients
  • 1 Cup Salted Cashew Butter*
  • ½ Cup Coconut Sugar
  • 1 Large Egg
  • ½ Teaspoon Vanilla Extract
  • ½ Cup Dark Chocolate Chips (I used Enjoy Life brand to keep things dairy free)
  • *If you have unsalted cashew butter, add in a dash of salt to the cookie dough.
Instructions
  1. Preheat oven to 350F. Prepare a baking sheet with parchment paper or a silicone mat. Set aside.
  2. In a large bowl, combine the cashew butter, coconut sugar, egg and vanilla. Mix until well combined and a soft dough forms.
  3. Fold in chocolate chips until well-mixed. If the dough is too soft to form into cookies, place in the fridge for 10-15 minutes to firm up.
  4. Using a cookie dough scoop or a tablespoon, form dough into balls and place on the cookie sheet and gently flatten.
  5. Bake for 10-12 minutes, or until golden brown. Remove from oven and allow to cool.
  6. Store in an airtight container in the fridge.
