Cranberry Bliss Energy Bites

Ingredients
  • 2 Cups of Cashews (can also sub almonds)
  • 1 Cup Dates, pitted and chopped
  • 1 Cup Dried Cranberries
  • ½ Teaspoon Vanilla Extract
  • ¼ Cup White Chocolate Chips
  • Pinch of Sea Salt
Instructions
  1. Place cashews in a food processor and pulse until a coarse meal is formed.
  2. Add the pitted chopped dates, cranberries, vanilla and salt. Process until the fruit is blended with the cashews, and a large sticky ball forms.
  3. Add the white chocolate chips to the food processor and pulse until white chocolate is chopped and blended with the rest of the mixture.
  4. Use a cookie dough scoop or tablespoon to spoon out the mixture and roll into balls. Store in an airtight container in the fridge or freeze for longer storage.
