Place cashews in a food processor and pulse until a coarse meal is formed.
Add the pitted chopped dates, cranberries, vanilla and salt. Process until the fruit is blended with the cashews, and a large sticky ball forms.
Add the white chocolate chips to the food processor and pulse until white chocolate is chopped and blended with the rest of the mixture.
Use a cookie dough scoop or tablespoon to spoon out the mixture and roll into balls. Store in an airtight container in the fridge or freeze for longer storage.
