In a saucepan over medium heat, combine the almond milk, honey, peppermint extract and cocoa powder, Whisk until warmed through, and honey and cocoa powder are dissolved.
Transfer mixture to a blender and add coconut oil. Blend until coconut oil is emulsified with the chocolate mixture.
Combine ¼ cup creamer with 1 cup of coffee to make a single serving peppermint mocha. Store the remaining creamer in a sealed container in the fridge for up to five days.
