Healthy Peppermint Mocha

Ingredients
Peppermint Coffee Creamer:
  • 1 Cup Unsweetened Almond Milk (or milk of choice)
  • 3 Tablespoons Honey (sub maple syrup for vegan)
  • ¼ Teaspoon Peppermint Extract
  • 2 Tablespoons Unsweetened Cocoa Powder
  • ½ Teaspoon Coconut Oil, melted
Peppermint Mocha:
  • ¼ Cup Peppermint Coffee Creamer
  • 1 Cup Brewed Coffee or Espresso
Instructions
  1. In a saucepan over medium heat, combine the almond milk, honey, peppermint extract and cocoa powder, Whisk until warmed through, and honey and cocoa powder are dissolved.
  2. Transfer mixture to a blender and add coconut oil. Blend until coconut oil is emulsified with the chocolate mixture.
  3. Combine ¼ cup creamer with 1 cup of coffee to make a single serving peppermint mocha. Store the remaining creamer in a sealed container in the fridge for up to five days.
