Mango Chia Pudding Parfaits

Ingredients
Chia Pudding
  • ⅓ Cup Chia Seeds
  • 1½ Cups Unsweetened Almond or Coconut Milk
  • 2 Tablespoons Maple Syrup
  • 1 Teaspoon Vanilla Extract
Mango Puree:
  • 2 Cups of Fresh Mango, cubed
  • Juice of 1 Lime
  • 1 Inch of Fresh Ginger
Toppings (Optional):
  • Toasted Coconut
  • Raspberries
  • Fresh Mint
Instructions
  1. In a medium bowl, combine the chia seeds, almond milk and vanilla. Whisk to combine. Cover and refrigerate for 4 hours or overnight.
  2. In a blender, combine the mango, lime juice and ginger. Puree until smooth.
  3. Layer the chia pudding and pureed mango evenly among two mason jars or glasses.
  4. Top as desired. I used toasted coconut, fresh raspberries and mint.
