No-Bake Pumpkin Spice Donut Holes
- 1 Cup of Chopped, Pitted Dates*
- 2 Tablespoons Pumpkin Puree
- 1 Teaspoon Pumpkin Pie Spice
- ½ Teaspoon Vanilla
- 2 Scoops Vanilla Protein (I used Ka'Chava)
- ½ Cup Pumpkin Seeds
- ½ Cup Chopped, Toasted Pecans
- Cinnamon for Dusting (Optional)
- Place the chopped dates in a food processor and pulse until they break down.
- Add the remaining ingredients to the food processor and blend until all ingredients are combined and form a ball.
- Roll ~2 Tablespoons at a time into balls, and place them on a cookie sheet.
- Refrigerate for 20-30 minutes until firm.
- Sprinkle with additional cinnamon as desired.
- Store donut holes in a sealed container in the fridge for up to a few days.
If your dates aren't soft, soak them in warm water for a few minutes and drain well before using.
