No-Bake Pumpkin Spice Donut Holes

Ingredients
  • 1 Cup of Chopped, Pitted Dates*
  • 2 Tablespoons Pumpkin Puree
  • 1 Teaspoon Pumpkin Pie Spice
  • ½ Teaspoon Vanilla
  • 2 Scoops Vanilla Protein (I used Ka'Chava)
  • ½ Cup Pumpkin Seeds
  • ½ Cup Chopped, Toasted Pecans
  • Cinnamon for Dusting (Optional)
Instructions
  1. Place the chopped dates in a food processor and pulse until they break down.
  2. Add the remaining ingredients to the food processor and blend until all ingredients are combined and form a ball.
  3. Roll ~2 Tablespoons at a time into balls, and place them on a cookie sheet.
  4. Refrigerate for 20-30 minutes until firm.
  5. Sprinkle with additional cinnamon as desired.
  6. Store donut holes in a sealed container in the fridge for up to a few days.
Notes
If your dates aren't soft, soak them in warm water for a few minutes and drain well before using.
