Serves: 9
Ingredients
  • 1½ Cup of Gluten-Free Rolled Oats
  • 1 Cup of Oat Flour (I pulsed my oats in the food processor to make flour)
  • ½ Teaspoon Baking Soda
  • 1 Teaspoon Cinnamon
  • ¼ Teaspoon Salt
  • ¼ Cup Coconut Oil, Melted
  • ¼ Cup Applesauce
  • 2 Tablespoons Molasses
  • ⅓ Cup Coconut Sugar
  • ½ Teaspoon Vanilla Extract
  • 2 Eggs, Whisked
  • ½ Cup Raisins or Chocolate Chips
Instructions
  1. Preheat the oven to 350F, and prepare an 8x8 pan with parchment paper.
  2. In a large bowl mix the oats, oat flour, baking soda, cinnamon and salt until combined. Set aside.
  3. In a separate bowl, whisk together eggs, applesauce, molasses, vanilla and coconut sugar until mixed. Once combined, slowly pour in the coconut oil while continuing to whisk the mixture.
  4. Add the wet ingredients to the dry ingredients, and combine with a wooden spoon. It should be thicker than a batter, but thinner than cookie dough.
  5. Fold in raisins, then pour mixture into prepared pan. Spread into an even layer.
  6. Bake at 350F for 20-22 minutes. You want the bars to be set, but still soft.
  7. Allow to cool completely on a wire rack before cutting, then cut into 9 bars.
  8. Store in a sealed container for up to 5 days.
