Healthy Mint Chocolate Chip Ice Cream

Ingredients
  • 2 Bananas, Frozen and Sliced
  • 1 Cup Frozen Spinach
  • ½ Teaspoon Peppermint Extract
  • A little unsweetened Almond Milk to get things moving (I used ~3 Tablespoons)
  • ⅓ Cup Chocolate Chips (I used Enjoy Life Brand)
Instructions
  1. Place the bananas, spinach and extract in a food processor and pulse until broken down. Then process until smooth, adding almond milk as needed to get a soft-serve consistency.
  2. Transfer mixture to a large bowl, and fold in chocolate chips.
  3. For soft-serve, eat it as-is. If you would like more of an ice cream consistency, place in the freezer for about an hour before serving.
