Easy Cauliflower Crust Pizza

Ingredients
  • 1 Small Head of Cauliflower, chopped into pieces (~3 Cups)
  • 1 Egg, whisked
  • ⅓ Cup Grated Mozzarella Cheese
  • 2 Tablespoons Flaxseed
  • ¼ Teaspoon Garlic Powder
  • ¼ Teaspoon Oregano
  • Salt and Pepper
  • Toppings: Your favorite pizza sauce, cheese, veggies, etc.
Instructions
  1. Preheat oven to 400F.
  2. Cover a baking sheet with parchment, and lightly spray with olive oil spray. Set aside.
  3. Pulse the cauliflower in a food processor until it's a rice-like consistency.
  4. Put the cauliflower in a microwave safe bowl, and cook in the microwave for 8 minutes. Allow to cool.
  5. Place the cauliflower onto a clean kitchen towel, and wring out to dry. You want to remove as much of the water as possible - this is key for getting the right texture.
  6. When the cauliflower is dry, place in a medium bowl and combine with grated mozzarella, egg, flax and seasoning. Mix well until combined.
  7. Transfer the cauliflower mixture onto a baking sheet, and press into a thin, even layer and spray a touch more olive oil.
  8. Bake for 10 minutes, until golden brown.
  9. Remove from oven and add additional toppings. Return to the oven for an additional 5-6 minutes until cheese is melted and toppings are warm. Broil for 1-2 minutes so the cheese can get nice and bubbly.
  10. Slice and serve.
