1 Small Head of Cauliflower, chopped into pieces (~3 Cups)
1 Egg, whisked
⅓ Cup Grated Mozzarella Cheese
2 Tablespoons Flaxseed
¼ Teaspoon Garlic Powder
¼ Teaspoon Oregano
Salt and Pepper
Toppings: Your favorite pizza sauce, cheese, veggies, etc.
Instructions
Preheat oven to 400F.
Cover a baking sheet with parchment, and lightly spray with olive oil spray. Set aside.
Pulse the cauliflower in a food processor until it's a rice-like consistency.
Put the cauliflower in a microwave safe bowl, and cook in the microwave for 8 minutes. Allow to cool.
Place the cauliflower onto a clean kitchen towel, and wring out to dry. You want to remove as much of the water as possible - this is key for getting the right texture.
When the cauliflower is dry, place in a medium bowl and combine with grated mozzarella, egg, flax and seasoning. Mix well until combined.
Transfer the cauliflower mixture onto a baking sheet, and press into a thin, even layer and spray a touch more olive oil.
Bake for 10 minutes, until golden brown.
Remove from oven and add additional toppings. Return to the oven for an additional 5-6 minutes until cheese is melted and toppings are warm. Broil for 1-2 minutes so the cheese can get nice and bubbly.
Slice and serve.
