¼ Cup White Chia Seeds (black will also work, but it may change the color)
1 Cup Unsweetened Almond, Cashew or Coconut Milk
½ Teaspoon Vanilla Extract
3 Tablespoons Fresh Lime Juice
½ Teaspoon Lime Zest
2 Tablespoons Honey or Maple Syrup
1 Cup Fresh Spinach
Optional Toppings:
Coconut Whipped Cream
Crushed Graham Crackers
Instructions
Whisk together the milk and chia seeds in a medium bowl. Cover and allow to refrigerate for a few hours or overnight, until the seeds have absorbed most of the liquid.
In a high-speed blender, blend the chia mixture, vanilla, lime juice, zest, honey and spinach until well combined.
If desired, place in the fridge to chill before serving.
Notes
Cook/prep time does not include chilling of the milk and chia.
