Key Lime Pie Chia Pudding

Ingredients
  • ¼ Cup White Chia Seeds (black will also work, but it may change the color)
  • 1 Cup Unsweetened Almond, Cashew or Coconut Milk
  • ½ Teaspoon Vanilla Extract
  • 3 Tablespoons Fresh Lime Juice
  • ½ Teaspoon Lime Zest
  • 2 Tablespoons Honey or Maple Syrup
  • 1 Cup Fresh Spinach
  • Optional Toppings:
  • Coconut Whipped Cream
  • Crushed Graham Crackers
Instructions
  1. Whisk together the milk and chia seeds in a medium bowl. Cover and allow to refrigerate for a few hours or overnight, until the seeds have absorbed most of the liquid.
  2. In a high-speed blender, blend the chia mixture, vanilla, lime juice, zest, honey and spinach until well combined.
  3. If desired, place in the fridge to chill before serving.
Notes
Cook/prep time does not include chilling of the milk and chia.
